There are some conflicting reports over whether you can concurrently use both the HDMI output for audio *AND* the fiberoptic audio cable for sound from the PS3, but if you simply want sound to be carried over fiberoptic *instead* of over HDMI, then simply set the digital audio output to "optical" in the PS3's Sound Settings menu.
If you want to use the TV speakers via HDMI and the receiver/stereo sound via fiberoptic, then you can try using the PS3's stereo ANALOG (white/red) output to the TV while you use optical to the receiver. This should work as long as your TV has an HDMI input with analog audio support (some TVs have this, and some don't).
Anyway, confirm that the PS3 is set to output digital audio over fiberoptic and let us know if that helps.
